2lbs- Black Eyed Peas( Soak In Pot Over Night In Water)
2 Cups- Shallots Diced (Or Yellow Onion)
Half Cup Chopped Cilantro
Half Cup Chopped Cilantro
1 Cup- Diced Celery
2 Cups- Diced Tomatoes
6-Small Dried Chilies Chopped
6-Small Dried Chilies Chopped
6-Fresh Andouille Sausage Links
3-Table Spoons Louisiana Hot Sauce
2 Cups- Half And Half
3 Table Spoons Chicken Base
1 Cup- Butter
1 Cup Flour
Salt And Pepper

Cover black eyed peas with water overnight
Next Day... You will need to add more water to the pot due to the peas will soak up all the water. The water should be 5 inches higher than the peas Boil peas for 15 minutes- Add shallots, Cilantro, celery, dried chilies, tomatoes, chicken base and hot sauce. While the soup is boiling- Add 1 inch pieces of the andouille sausage. Cook for 40 more minutes. Next add half and half. Melt butter, Whisk the flour and melted butter together then add to pot to make it thicken. Last but not least...salt and pepper
